Has this rule ever come up in any of the 40k novels?
For example, has there been a scene in book where an Assault Marine using a Plasma pistol fires at an enemy and the pistol overheats or malfunctions?

yes...if i recall correctly in Graham McNeils "Storm of Iron" it happens to a guardsmen or an imperial fist.

In Brothers on the Snake a plasma gun over heats on a marine. He sets it down and shoots it with a bolt pistol causing it to explode and kill about 50 or so Orks.

one of the space wolf books a plasma pistol explodes in the space marines(dark angel? I think it was) hand doenst kill anyone or really do any damage except to itself

It was to a guardsmen. I read that book a couple months ago. I would highly reccomend this book. Fantastic seige battles with Iron Warriors vs Imperial Guard and Imperial Fists!

If you like that guy you should read the third part of the original Ultramarines trilogy... he has a pretty major part to play in that book.

Might want to read all of them actually. Might make more sense haha. Storm of iron fits in between the 2nd and 3rd book (storm of iron is an older book that has recently been reprinted)
