While browsing though the Daemon codex, I came across the fact that not all daemon princes are CSM. I could finally have my Giant living doll daemon prince, I've always wanted. But I was wondering if anybody would have an issue with it.

I wouldn't think that most would, as long as you had some decent fluff with it. I mean, a daemon prince is a daemon prince, and Chaos being Chaos, they could be whatever they wanted. I would say, personally, if it had normal powers/toughness/wounds/etc, I would have no issues playing against it.
