The only real difference between the two seems to be a bow and 3 points per model (4 w/ shields).

With this in mind, for RTT purposes or even casual play, could you model a SM as a LSG (with the bow glued on) and usew the models as either or, or is that frowned upon?

I am not sure about the grand tourney legality, but I modeled all of mine with the bow and use them as as spearmen. If you are concerned about it you can probably pin the bows or use magnets.
