Can you model DCA and Crusaders from the Grey Knights codex with any power weapon, even though the model has a sword? Would it be considered "modeling for advantage" in a tournament? Want to know what would be acceptable.

If you wanted to convert them to carrying Mauls or Axes instead of swords, you could do that as there are three types of power weapons and I believe the BRB states that you use the power weapon profile for the weapon that the model has. Would that be "modeling for advantage", I don't think so. It's just part of the models equipment/options. It really depends on the codex entry. Does it say they are equiped with "power weapons" or "power swords"? If it is power swords and then that is specific and I would think they would have to stay with those. If it is stated as "power weapons' then that is generic and you should be able to pick your type.

It specifically states "power weapon", which implies that you can pick anything, though both of the "official" models come with swords. Just wanted to check and make sure.
